Gansett Porter Beef Stew

 

It's hearty, it's healthy and beef stew is just perfect on snowy days in New England winters. This specific stew is made specially with Narragansett porter beer. A nice hearty beer as well for these rough winters. Thanks to one of our Facebook fans for sending this one in. It's going to be just perfect to make during the first big snow storm of 2011. Cooking this stew is a great way to pass the time snow'd in and get you warmed up after shoveling all that snow. Enjoy!

'Gansett Porter Beef Stew recipe by Bill Schmidt

Prep Time - 30min
Cook Time - 2.5 hours

Ingredients:

-1.5lbs beef round chopped into approx 1in cubes
-7-8 small/med red potatoes cut in half, then quartered
-5-6 large carrots chopped
-1 lg onion chopped
-1.5 cups frozen or fresh peas
-1tsp Rosemary
-1.5tsp Chopped Garlic
-1tsp Thyme
-1tsp Parsley
-2 Beef Boulion Cubes
-2 16oz cans of 'Gansett Porter
-1 cup Water
-1 14.5oz can whole tomatoes (w/liquid)
-1/4 cup butter
-salt/pepper
-flour

Lightly salt and pepper the beef. Use just a little salt to avoid making the stew too salty as it reduces down. I recommend adding salt only during the last 15 min of cooking. Heat the butter in a large stew pot over medium heat. While the butter is warming, lightly coat the beef cubes in flour and then brown the beef in the butter in the large stew pot. Be sure to leave enough room around the beef so it browns properly; you may have to cook in batches.

Once the beef is browned add the canned tomatoes and water and let cook, covered over med/low heat for 80-90 minutes stirring every 15-20 minutes.

Bring the heat up to med/high and add the potatoes, carrots, onion, peas, rosemary, garlic, thyme, parsley, boullion cubes, and 'Gansett Porter. Be sure that there is enough liquid to cover the vegetables. If needed add more Porter or water.

Bring to a boil, than reduce heat and cook covered for at least one hour, remembering to stir occasionally. You can continue to cook the stew beyond the one hour point until it has reduced to your liking. Be sure to keep the heat low and add salt to taste if desired during the last 15min of cooking time.
